INGREDIENTS: (Pax 2 - 4)

• 1 cauliflower (1 kilo)

• 2 tablespoons of extra virgin olive oil (optional)

• 2 tablespoons of water or vegetable stock.

• Ground black pepper.

• Garlic powder.

• Nutmeg.

• Salt.

Mashed cauliflower, a very simple first course or side dish, which is prepared with only 7 ingredients. It is very creamy and has a great flavour. This mashed cauliflower is so rich and creamy, it's hard to believe it only contains cauliflower, in fact it's very reminiscent of the texture of mashed potatoes.

The trick to getting a cauliflower purée with a good consistency is to add just the right amount of liquid; if you add too much, it becomes too watery and the texture is not the same.

How to prepare the cauliflower puree.

1 Discard the outer leaves and the central stalk of the cauliflower, chop it and steam it for about 10 minutes or until it is tender. You can also cook it in water if you like, but remember that it will need less liquid when you mash it.

2 Put the cooked cauliflower in a large bowl with the oil and the rest of the ingredients and blend with a hand blender.

a hand blender until you get a texture like mashed potatoes. If you like, you can also use a food processor or blender. It is smoother.

4 If you don't want to use oil, you can just use vegetable stock or water. You will probably have to add more to replace the oil, but be careful not to make it watery.

5 Serve it hot, garnished with parsley, pepper and oil or the herbs you like best, try it and let us know. Some people decorate it with linseed and pumpkin seeds, but in our case, as we are currently in phase 1 of the slimming process, we are not going to do it.If you have made too much and have leftovers, you can keep it in an airtight container in the fridge for 3 or 4 days.
